SHRIMP QUICHE

1 9-inch unbaked pastry shell
1 1/2 teaspoon salt
1 1/4 lbs peeled and deveined shrimp, cooked (about 1 1/2, lbs shell-on shrimp)
1 cup thinly sliced onion
1 1/4 cup butter or margarine
3 eggs
1 1/2 teaspoon chopped chives
I cup light cream
1 1/2 teaspoon marjoram
1 1/2 cup shredded Gruyere or Swiss Cheese
1 1/2 teaspoon chopped parsley

HOW TO COOK SHRIMP

Bring salted water to a boil. Add shrimp and when it comes to second boil remove from heat. Preheat oven to 375. Cool shrimp under cold running water. Drain thoroughly. Mix together eggs, cream, cheese and salt. Very slowly cook onion in butter or margarine until very soft but not brown. Add to egg mixture along with chives, marjoram, parsley, and cooked shrimp Spoon into pastry shell. Bake for 30-35 minutes Makes 6 servings
