PANFRIED SPICED SHRIMP
2 pounds shell-on shrimp (cleaned)
1 teaspoon salt
2 garlic cloves (thinly sliced)
1 teaspoon fresh ground black pepper
2 teaspoons ground cumin
2 teaspoons paprika
4 tablespoons olive oil
juice of 2 limes
2 red jalepemo chile or small red bell pepper (steamed, seeded & julienned)
2 large scallion (trimmed and thinly sliced on a diagonal)
Defrost, shell & devein shrimp. Combine the salt and pepper,cumin and paprika in a bowl. Add the shrimp and toss to coat evenly. Heat the oil in a large skillet over high heat. Saute the shrimp 10 to 12 minutes. Toss
In the jalepeno or bell pepper, scallion and garlic and cook 2 minutes Longer. Remove from heat, stir in the lime juice and serve.
