BAKED ORANGE ROUGHY
4 (8 ounce) orange roughy fillets
8 ounces dry white wine
2 teaspoonsfinely chopped garlic
8 ounces butter.
2 tablespoons lemon juice
2 teaspoons chopped cilantro
salt and pepper to taste
Season fish with salt and pepper. Place in oval casserole dish. Melt butter in sauce pan. Add wine and remaining ingredients, except The paprika. Simmer about 2 minutes, remove from heat and spoon over fish. Sprinkle paprika over fish. Bake in preheated 375 degree oven for 25 to 30 minutes, or until done.
